Roasted Delicata Squash with Herbs and Parmesan

Ingredients

-2-4 Delicata Squash ( plan ~½ squash per person)
-Olive oil
-Salt, pepper, a few dry herbs (I like rosemary, sage, and thyme)
-Freshly grated Parmesan

 

Directions

1. Set the oven at 450 degrees.
2. Cut each squash half into 3 triangular pieces. In a small roasting pan, set the squash cut sides up. Rub the flesh with oil and sprinkle with salt, pepper, and herb mixture.
3. Roast the squash for 35 to 45 minutes or until the flesh is tender when pierced with a skewer and the edges are caramelized. Sprinkle with more olive oil and grated Parmesan.  Enjoy!


Simple.  Beautiful.  Delicious.  Make these in advance and reheat in a 400-degree oven for 20 minutes.
